Quick and Easy Burritos for your family
Mexican Night Made Easy!
Some nights I don't have a lot of time to prepare dinner so I have found this great burrito recipe to fit the bill for our busy nights and our love of mexican food! It's so easy and the leftover burritos (if you have any!) freeze super! In fact, I try to make an extra batch just to have in the freezer for snacks and on-the-go lunches. These also work well if you absolutely have to eat dinner in the car in between practices (something I'm not a fan of but occasionally you just can't avoid it with 3 active boys!). Try these out!
Quick and Easy Burritos
1 pkg 10in Flour toritillas (Warm them in microwave for 30 sec.--makes it easier to roll up!)
1 can pinto beans, rinsed
1 can black beans, rinsed
1 package of Taco Seasoning
2 cups shredded Chedder Cheese
(options: you can add ground meat, steak strips, tofu, tomatoes, onions, corn, olives, etc)
In a medium bowl, mix together both types of beans, seasoning, cheese and any options you may be adding. Stir well making sure the seasoning is coating everything. Begin spooning 2 tablespoons of filling on the tortilla. Roll the tortilla half way, fold in the sides then continue rolling to the end. Lay the burrito seam-sided down into a glass casserole dish. Continue filling and rolling the entire package of tortillas. Once the pan is full, you can sprinkle cheese on the top if you'd like. Bake at 350 degrees for 15-20 minutes or until heated through. Serve with a side salad, chips and salsa and you will have a happy family quickly!

Here's a new variation I just tried this weekend and now we love these burritos even more! I added a can of rotel tomatoes to the bean mixture (drain first). Boy, did that just take it up a notch on the love meter!!
